Gratinéed Salt Cod with Bomba Rice


I have never been a big fan of seafood: something my dad expressed concern over when realizing the menu at most restaurants we’d be visiting. But over the course of these four days, I tried (and enjoyed most of) at least ten new types of food. Salt cod doesn’t really count as one of them, as I had had bites of fried salt cod in the past, but a new appreciation and admiration for seafood may have started with this dish. Gratinéed with garlic and resting atop risotto-style bomba rice, this salt cod left me actually craving more fish (again, despite my apparent lack of hunger).
