In Richmond, close to my house, is a little store called Libbie Market. At least once a week, often times more, my friends and I visit the market and head straight for the create-your-own-sandwich counter. I usually get a grilled wrap with turkey and vegetables, but on Saturday I was craving something more substantial. I checked off cracked pepper turkey, cheddar cheese, lettuce, bacon, hot peppers, sweet onions, balsamic vinaigrette, and ciabatta bread. I asked for it to be grilled, which they’ll do if you write it on top of the form, and I thoroughly enjoyed every bite. Libbie’s sandwich station is always a hit and my favorite go-to when I’m unable to decide what to eat.
