As I have written about before, I love cooking for people as gifts. This was what I made for Mother’s Day, and it was very simple. I did not follow a recipe, and I did not make them in hopes of being authentic. Instead, I put together fixings of red onions, cabbage, cilantro, and bell peppers, which I soaked in olive oil and seasonings before wrapping them in tin foil and throwing them on the grill. I bought cod and marinated it in lemon and lime juice, seasoning, and olive oil for about an hour. Took only a few minutes on each side on the grill for this to come out perfectly tender and flavorful. Stuffed the ingredients inside the best corn tortillas I could find and served them with a fresh margarita. This meal was a perfect start to summer and made for a very happy mother on her special day.
