Grilled Pizza (the easy way)

I cheated on this one, but I still thought I’d share because these were very simple yet delicious entrees for a small dinner party I had. By cheating, I mean I bought the pizza crust. As in already made crust, not dough. To make up for this shameful act, I tried to get creative with toppings.

The pizza on the left of the 2nd picture above has vodka sauce, fresh mozzarella, and basil. Very easy and very good.

The one on the right has grilled marinated chicken, pizza sauce, a generous amount of cheese (Italian blend and also fresh parmigiana on top), arugula, and a balsamic reduction. I marinated the chicken in Italian dressing, seasonings, a little balsamic, and olive oil. They were very thin tenders, so they only took a few minutes to grill. I drizzled with a balsamic reduction, which if you don’t know how to make, is explained in this recipe:

The last one that I made, that I didn’t take any good photos of because it simply just didn’t look as good, had a whole wheat crust, pizza sauce, Italian blend cheeses, and variety of grilled vegetables. I grilled the vegetables before putting them on the pizza.

These were so simple and delicious. Simply spread an even layer of sauce across your pizza dough (or store-bought crust), layer on your toppings, and grill until cheese is melted.
