Mediterranean Chickpea Patty & Spicy Hummus

When my sister became a vegetarian, my mom started keeping all sorts of frozen veggie patties in the freezer. My idea to make my own Mediterranean Chickpea patties came from one of the frozen packages we often have (that I actually really enjoy:

I looked up a few different recipes, and decided to use the following:

I followed this recipe closely, and it worked very well. I have previously attempted different kinds of bean based patties, or quinoa burgers, and sometimes the consistency does not come out like I want it to. This recipe, however, worked very well! I placed my patties over a bed of arugula, sautéed onions and mushrooms, parmesan, olive oil, and lemon juice. I also served with a slice of toasted baguette with olive oil, and topped the patties with a dollop of spicy hummus, which I made from my own recipe.

Spicy Hummus


  • 1 can of chickpeas
  • Juice from 1 lemon
  • 1 tbsp ricotta cheese (a trick a friend taught me for a very nice & smooth consistency!)
  • 1/2 clove garlic (minced)
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1/4 cup tahini
  • 1 tsp red pepper flakes
  • Your favorite hot sauce to taste
  • Pepper, cumin, chili powder to taste

Pulse all ingredients in a food processor until chickpeas are smooth and desired texture is reached. Healthy, simple, delicious.
