Roasted Blueberry and Brie Cornbread Muffins with Warm Honey Butter

While I was home for the weekend, I cooked a big brunch for my family. I wanted a variety of options for the spread, and decided muffins would be fun to try. I do very little baking, but after this recipe, that might change. These were SO good!

As I’ve repeatedly mentioned, the blog Half Baked Harvest has some of my absolutely favorite recipes. They are always so creative and delicious! I got this recipe from the site, and followed it exactly. My only issue with the recipe was that my muffins did not turn out as gooey with a cheesy center as the ones on the site did. They were a little more dense, which I’m not sure how to fix. I think my entry into baking will just have to be more trial and error than anything. They were still great, and the honey butter was by far the best addition to the muffins. The family was definitely pleased!
