As I’ve mentioned in previous posts, I love making breakfast for myself with pretty much anything I have in the fridge. I never used to like runny eggs, and the sad truth is that I actually tried making one for the first time based on the sole fact that they are prettier to take pictures of… Despite this somewhat absurd reasoning, I ended up loving them! The sandwich above features one hard and one over easy egg, sautéed green onions and chives, a slice of Kraft American cheese, sun dried tomato spread that I had left over from another dish, jalapeños, lots of pepper, and Sriracha on an English muffin. Loved the spicy kick and it kept me full until dinner!
